Tonight Julie slaved over the kitchen and created an amazing new dish, inspired by a conventional pot pie, but definitely made better vegan.
Starting from the bottom up:
Celery, mushrooms, carrots, lentils, leeks, red peppers and kale. Spices include garlic, cayenne pepper, italian herbs and sage. On top of that a layer of Daiya "cheese". On top of that a layer of sweet potato mash. Baked in the oven.
